THE PROPERTY
This is a family property of around 15.5 hectares of vines, located in the northern part of the Côte de Beaune (encompassing the appellations of Chorey, Savigny, Aloxe-Corton and Ladoix), at Ladoix, just within sight of the boundary of the Côte de Nuits. Production is principally red from 13.5 heactres of Pinot Noir, 1.5 hectares of Chardonnay and half a hectare of Aligoté. The domaine is run by Pierre, Edith his wife and his cousin Emmanuel. Edmond, although now retired, continues to lend invaluable support, whether imparting advice or giving a helping hand when needed.
The property has evolved with the passage of time by adapting to economic, technical and social challenges. For the past 30 years, the domaine has thrown itself into the commercialisation of its harvest (which is always 100% bottled on site), and supported growth by making some key investments (in equipment, buildings and commercial infrastructure).
In order to show its respect for the environment, and the interaction between man and nature, the family set about forming an integrated vineyard policy and were rewarded in 2007 with an Agriculture Raisonnée certificate. This is definitely a project for the long-term. For example: finding the right balance between the encroachment of weeds and the healthy growth of the vine. They employ suitable methods to maintain this balance (by means of plant protection products, manures, vine-friendly products, etc.). By adopting this philosophy, the vine develops in harmony with its surroundings (i.e. the flora and fauna), thus facilitating the growth of exceptional grapes, which are healthy and able to reach maximum ripeness. By applying these guiding principles, the winemaking at this property doesn’t necessitate any bolstering to deliver quality wines endowed with beautiful personalities.

Delicacy, refinement and elegance are the three words which Pierre Cornu likes to ascribe to his wines.
"Our vinifications preserve the character of each appellation. We're totally committed to respect for terroir and grape variety." There is no mechanical harvester at the Cornu domaine. The grapes are picked by hand to retain the maximum of freshness and condition.
And the quality ofthe wines faithfully reflects the thought and care that go into every step from vineyard to vatting. Everything is conditioned by the pursuit of quality, even the static action of the pneumatic grape-press which permits the juice to run off freely without mechanical assistance.
Great care is taken in the whole wine-making process to avoid hard or over-extracted wines.
After vatting, the wines undergo 18 months elevage in barrels before bottling.
From that moment on they may be drunk and enjoyed at any age.
The domaine's respect for nature and the environment is attested by their certification as a low-impact agricultural enterprise.
