Origine

This 0.70-hectare plot, surrounded by walls and a "murger" (dry stone wall), is located beneath the Sorine mill, restored in 1995, which enjoys a panoramic view over the Gravières vineyards.

The well-drained, shallow, stony white soil on the hillside produces a wine with finesse, rich nuances and depth.

Vinification

Harvesting: By hand.

Vinification: Alcoholic fermentation in barrel for 2 months. Stirring of the lees (bâtonnage) determined by tasting and monitoring the wine.

Ageing: 14 months: 12 in barrels on the lees without any racking, then 2 months in vats. 100% in oak barrels, 30% of which are new.

Clarification: fining and lenticular filtration.

Notes de dégustation

The harvested grapes are characterised by their small size. The result is a wine with a pale gold hue. The nose opens with notes of fresh fruit and white flowers with finely integrated oak from the 12 months of carefully managed ageing in oak barrels.

Mets d'accompagnements

This wine will pair well with fish and poultry dishes in a cream sauce.
