Origine
The wine comes from two lieux-dits, "Les Seuvrées" and "Clos Solon", located at the bottom of the hillside at an altitude of 240 metres. The soil is clay, unevenly interspersed with boulders. These are fairly deep soils, more traditionally planted with Pinot Noir in this area, but we decided to plant these two plots in 2007 and 2011 to produce white wines.
Our surface area: 0.1565 hectares
The vines are grown using methods that are as respectful as possible of the soil and the plant.
The pruning used is Guyot Simple.
Vinification
Pressed in whole clusters in a pneumatic press, 48 hours cold settling.
Transfer into barrel, fermentation with native yeasts.
Malolactic fermentation. The wines are naturally fairly smooth thanks to the terroirs from which they originate, so we do not carry out any stirring of the lees ("bâtonnage").
Only one racking is carried out. We bottle the wine ourselves at the production site.

Morey St Denis White is a fairly smooth, well-structured white wine that can be enjoyed young but also cellar-aged for 3-5 years.
Mets d'accompagnements
This is a white wine intended to be enjoyed with food. It goes well with fish in a sauce as well as roast poultry.
