Sylvain Dory is at the head of this family domaine since 1988. He is the sixth generation of wine growers. The 6 hectares of Julienas grow in the “Les Mouilles” climat. Its very stony schist and granite soils naturally curb yields, thus ensuring that the grapes ripen perfectly. All the work in the vineyards is carried out by hand, no mechanization is used at the domaine.
Vinification
The harvesting is carried out by hand and the grapes are transported to the winery in crates. The harvested grapes go into vat without destemming. Sylvain Dory carries out semi-carbonic vinifications. The wines are generally bottled in the spring without any barrel ageing.
Notes de dégustation
Dense, crimson hue with garnet highlights.
The wine is expressive on the nose, dominated by notes of violet. Its fine array of aromas includes cherries and raspberries.
There is lovely fruit on the palate and beautiful intensity accentuated by spicy notes. The tannins are smooth, making the wine lovely and silky on the palate, and giving it good length.
Mets d'accompagnements
Julienas can be kept for 5 to 10 years, depending on the vintage. It is a treat to drink, livening up aperitifs or pairing nicely with meat dishes.
