The Chezeaux Estate includes 67 a 59 of the Nuits-Saint-Georges "Les Charbonnières" appellation area. These vineyards all lie in the village of Premeaux-Prissey.
The soil is mainly composed of marl combined with sand and pebbles from the top of the hillsides. The plots are south-east facing.
Vinification
The grapes are hand-picked. Once stripped to 100% as dictated by vintage conditions, the harvest is stored in vats 3 to 4 days and undergoes cold maceration. Time spent in the vat lasts from 18 to 21 days, throughout which the harvest is closely monitored. The "foam" that forms on the must during fermentation is regularly sprayed. The pressing step following removal from the vat makes use of a high-quality pneumatic winepress. The wine is then racked into oak barrels, 30% of which are new each harvest, where it will remain for 15 to 18 months. Bottling takes place between February and April depending on the vintage.
Notes de dégustation
The tiny grapes due to the age of the vines endow this wine with a lovely concentration of aromas. Deep dark red color. Powerful and complex aromas: cherry, blackcurrant, fur, truffles and spice. Wines from the Nuits growing area are some of the most tannic in all of Burgundy.
Mets d'accompagnements
Ideal accompaniment for menus with red wine sauces, dishes featuring morel mushrooms, game or roasts. A winner with hearty red meats, perch in meurette wine sauce, medium-strong cheeses. This wine's structure lends itself to extensive aging.
