Domaine Jean Baptiste Lebreuil works two vineyard plots in the Savigny les Beaune appellation. They are located behind the village above the slopes, facing due south, at an altitude of around 350 metres.
Vinification
The harvested grapes are transported to the winery in a self-emptying container, which, as it empties into the press, lightly crushes the grapes, making it easier to release the free-run juice. Pressing lasts around 2 hours and the juice from the heaviest pressing is discarded.
The must remains in the vat for 2 days, then undergoes a cold settling (8°C) before alcoholic fermentation begins in the vat and finishes in the barrel. The temperature is controlled at 18-22°C to preserve the aromas.
In the barrel, the wine's lees are stirred (bâtonnage) every 15 days and it undergoes its malolactic fermentation.
At the end of its 12-month ageing period, the wine is racked to remove the deposit, then filtered and bottled.
Notes de dégustation
Bright pale gold hue. The nose is mellow with white flowers and toasty overtones. The palate is long and fat.
