Origine

"Mont Battois" is located in the commune of Savigny-les-Beaune at an altitude of around 350 metres. The vineyard plot lies on the hillside plateau overlooking Beaune. With a surface area of around 1.80 hectares, it is one of the domaine's largest single-block vineyards.

Vinification

The harvested grapes are fully sorted and destemmed before going into vat, where they remain for around two weeks. They undergo a 6-8 day cold maceration (8°C) with a pumping over of the juice. This is followed by an 8-10 day alcoholic fermentation with a punching of the cap to draw out the various components from the skins. The free-run juice and press juice are separated. Settling is carried out to remove the solids before transfer into barrels.

Notes de dégustation

Fairly light ruby red hue. Aromas of fresh red fruit with very soft tannins. Can be enjoyed relatively young but has a 3-8 year cellar-ageing potential depending on the vintage.

Mets d'accompagnements

Red meats, grilled meats and light dishes.
