Origine
A profoundly enjoyable wine.
Maranges ... This appellation, which has really taken off, must be handled with care in order to bring out its best. “Le Goty” is one of its best climats and the edge of our vineyards skirts those of Santenay Charmes.
Vinification
Harvesting: By hand.
Vinification: Cold pre-fermentation (5 days), alcoholic fermentation (10 days) post fermentation maceration (11 days)
Ageing: Transferred into barrels while warm. Aged for 14 months: 12 months in barrels on the lees without racking, followed by 2 months in vat. 100% in oak barrels, of which 20% are new.
Notes de dégustation
The vines, planted in 1945, delve deep and create a concentrated wine with an incredible inky black colour. The grapes tend to ripen fairly late and we give them time to fully ripen to obtain the smoothest possible tannins. We vinify this raw material quickly, with the greatest of care, to allow the purity of the fruit to express itself.
Mets d'accompagnements
Game, grilled cuts of beef, mature cheeses.
