Pierre Laurent owns 13.5 hectares on the village of Chevannes, located in area of Hautes Côtes de Nuits appellation, nearby Nuits-Saint-Georges.
The vines are 20 to 25 years old and are planted on a calcareous slop facing East, south East.
Since 2013, Pierre Laurent works his vineyards organically. He does not use any more herbicides or pesticides.
Vinification
Grapes are harvested by machine, 100% destemmed and then put into small vats of 50 hl, where pre cold maceration happens for 3 to 4 days. Afterwards, the Alcoholic fermentation starts and lasts for 13 to 15 days.
The wine is then aged in French oak barrels for 13 to 14 months. No new oak. Only barrel of 2 to 5 years old. The barrels are then assembled. A light filtration is done before the bottling.
Notes de dégustation
Bourgogne Hautes Côtes de Nuits shows aromas of small red fruits as redcurrant and morello cherry. A delicate wine.
Mets d'accompagnements
Watch well with red meats cooked in sauce. Also cheeses.
