This wine comes from 5 vineyard plots situated around the village of Santenay le Haut. These 5 terroirs are located inside, or in the extension of, the Montagne des Troix Croix cirque culminating at 521 metres (one of the highest peaks in the Côte d'Or). This wine is a lovely evocation of this unique environment, made up of a magnificent amphitheatre of vines, rocks and forests. One of these forests is known as the Bois de la Fée (Fairy Wood), which goes to show just how magical this spot is!
Vinification
Cold pre-fermentation maceration (5 days), alcoholic fermentation (8 days), post-fermentation maceration (5 days)
14 months ageing: 12 months in barrel on its lees without racking, then 2 months in vat. 100% in oak barrels, 20% of which are new.
Gentle, measured extraction, to bring out the fruit.

A fruity, elegant wine.
The soils of the “Saint-Jean”, “Bievaux” and “En Foulot” climats are very chalky and contain shallow sandy clay. They lend the wine elegance, finesse and minerality. Below, the “Saunières” and “Cornières” climats have deeper soils with a higher clay content. They provide this wine with power and structure and all the qualities one expects of an elegant Pinot Noir.
