This wine comes from two vineyard plots acquired by the domaine in 2015 and located in the lower part of the Gevrey-Chambertin commune, on adjoining climats: “Grand Champ” and “Prunier”. The surface area of a third of a hectare is enough to produce an average of 7 “pièces’ (228-litre Burgundy barrels). The clay-rich soil results in a fast ripening of the grapes, creating a round, well-structured and fairly powerful wine.
Vinification
In hot years, these two plots are the first to be harvested, sometimes even a few days before the domaine’s other vineyards in order to keep the grapes fresh and prevent them from developing too much sugar. The Bourgogne Pinot Noir receives the same care during vinification and ageing as the other wines bearing the Philippe Chéron signature - harvesting by hand, long and gentle fermentation and 15 months ageing in barrel.
Notes de dégustation
An intentionally full-bodied wine, this Bourgogne does not attempt to deny its village of origin. It is true to its terroir, with fruity touches of mainly blackcurrants and blackberries.
After 5 years cellar-ageing, it will reveal all its finesse.
Mets d'accompagnements
This wine is best served with the local Burgundy cuisine, such as a meat pie, oeufs en meurette (poached eggs in red wine sauce), coq au vin or Epoisses cheese.
