The Chablis plots are located in the communes of Lignorelles, Ligny le Chatel, Villy and Beine. The soils are poorer and better draining than in the Petits Chablis due to a greater presence of limestone at depth. The roots' contact with this subsoil gives Chablis its reputation for length and salinity.
The vines are between 25 and 30 years of age and pruned to the Simple and Double Guyot method.
Vinification
The domaine works 10,5 hectares of Chablis where we control the yields. Temperature control allows us to carry out low temperature fermentation in order to bring out all the aromas. The wine is aged for 10-14 months, 75% in stainless steel vats to preserve freshness and fruit and 25% in barrels previously used for 2 to 7 fills. Bottled at the Domaine.
Notes de dégustation
On the nose, this Chablis expresses itself to the full, with beautiful floral aromas gently carried by the wine’s freshness.
On the palate, the refined bouquet develops citrus notes before white flower and fruit aromas come through again. Fresh, supple and precise, it possesses a mineral intensity which gives it a lovely length on the palate.
Mets d'accompagnements
This wine can be enjoyed with seafood, grilled fish or fish in sauce, white meat or with mountain cheeses (Beaufort, Comté, etc.).
