Origine

One of our main vineyards in Chambolle Musigny is located in the Clos de l’Orme climat and extends over 36 ares.  This allows us to carry out a separate vinification of 7-8 pièces (228 litre barrels). Bordering the Les Charmes 1ercru, the vineyard is situated on a gentle slope, which drains well as it is made up of a thick layer of limestone scree from the Chambolle valley. It includes 6 different plantings: the oldest of which were carried out in the 40’s, then in 1967, 1970, 1972 and 1997. This diversity is one of the main reasons behind the complexity of the wine from the Clos de l’Orme.

Vinification

Harvested by hand and placed in perforated crates; sorted in the vineyard and again in the winery; the grapes go into the vat whole; the vatting period is long, sometimes up to a month, enabling a gentle, progressive, yet full extraction. The natural character of the Clos de l’Orme parcel is brought out by leaving 30% of the grape berries whole during vinification and by the use of a higher proportion of new barrels (20-25%). Aged for 10-12 months on the fine lees. Bottled, without any fining, three months after racking. 

Notes de dégustation

The domaine strives to preserve the wine’s fruit without foregoing a rich structure.  It tries to bring out and accentuate the typical character of the terroir, which is unique to each cru. This is particularly the case with this ’parcel approach’ for Clos de l’Orme.  When we taste the wine, we find the typical elegance of the wine from Chambolle, but with a particularly robust foundation. The wine is rich and concentrated and shows captivating length

Mets d'accompagnements

The Clos de l’Orme is an enjoyable, seductive and expressive wine.  Its charming character allows it to shine with a variety of different dishes.  It is equally at home with a terrine of game, a classic cut of beef, or even very refined soft cheeses. It will gain even more aromatic richness after a few years’ cellar ageing.
