The vines grow in the "La Tour du Bief" climat. This climat occupies the entire plateau in the middle of the Moulin-à-Vent appellation. This climat is undoubtedly the first of the appellation’s terroirs to have been home to a wine domaine (12-13th century).
Typical granitic soils (gorrhe) and subsoils rich in manganese and metal oxides. The strong winds that blow over the appellation have an important influence on the health of the vineyards and the maturity and concentration of the grapes.
Vinification
The grapes are picked by hand and completely destemmed. Cold pre-fermentation. Extraction period: 3 weeks.
Pumping over, carried out during the cold pre-fermentation and again, at the end of fermentation, helps give the wine a fine, smooth character. Cap-punching at the start of fermentation.
The wines undergo 14 months ageing in barrel before being bottled.
Notes de dégustation
Clear, bright deep ruby hue. The nose develops iris and ripe fruit aromas mixed with spicy notes. This wine is powerful, meaty and energetic thanks to its lovely acidity. It is best enjoyed with strongly-flavoured cheeses, red or white meat, or even game.
Mets d'accompagnements
Mouin à Vent pairs nicely with charcuterie, small game and white meats in creamy sauces or stews.
