The Aligoté vine grows in Le Clos du Meix Gobillon, located alongside the property’s buildings, where the soil is a light, dark brown earth, over gravel. The vineyard, planted in 1962, enjoys a special microclimate: it is bordered on the south by a small stream and, because it is enclosed within the walls and surrounded by buildings, it receives a lot of sun, allowing the grapes to attain good maturity.
Vinification
The grapes are picked by hand and gently pressed to extract the juice, without the use of any sulphur. The juice is then transferred to temperature-controlled stainless-steel vats for settling and then alcoholic fermentation. The fermentation temperatures are carefully controlled to optimise the wine's organoleptic qualities. The wine is aged in stainless steel vats for 6 to 8 months before being bottled.
Notes de dégustation
Bright, pale yellow hue, floral and citrus aromas come through on the nose. The wine is charming, light and fruity on the palate, combining smoothness and freshness.
Mets d'accompagnements
Bourgogne Aligoté can be enjoyed as an aperitif, or its own or combined with cassis to make a Kir. It goes very well with charcuterie, seafood and fish, and it can also be enjoyed with goat's and blue cheeses.
