Origine
The village of Bouzeron cultivates its difference: the Aligoté grape variety. It is the only village appellation in Burgundy to grow it. Domaine Briday's vineyard plots are located at the top of the hillside and boast a white marl soil that is particularly well-suited to Aligoté. The earth here is of medium depth but compact. The vines have an average age of 50 years.
Vinification
The harvested grapes are transferred into a pneumatic press. The grape juice is stored at a temperature of around 12°C. After 12 hours, the clear juice is drawn off: this is the process known as settling. The deposits collected by decanting are filtered and blended with the rest of the must. Fermentation starts in vats and 300-litre barrels (around 10% of which are new) at 12-14°C. The temperature is maintained at 17-18°C until all the sugars have been used up. Malolactic fermentation then follows. The wine is bottled before the following year's harvest, using a blend of vats and barrels to accentuate the wine's fat, richness and complexity.
Notes de dégustation
Pale gold with green tints. In Bouzeron, the Aligoté grape produces dry, fruity wines. The freshness of the white flower (hawthorn) aromas is remarkable. On the palate, the minerality, specific to the Bouzeron terroir, is coated with fruit flavours (white peaches, pears). The wine is crisp and lively, withan amazing roundness on the finish.
