Origine
From the commune of Vergisson. Jurassic stony clay-limestone. 8 parcels spread over the commune area. Facing directly south, west and east. Average age of the vines: 50 years.
Vinification
“Petite arcure” (cane bending) with 6-8 eyes, organic fertilizer, ploughing, yield control. All the wines are produced using environmentally-friendly viticulture as part of an overall “reasoned agriculture” approach. Harvested by hand, light crushing, pneumatic pressing and static settling. Fermentation is carried out in temperature-controlled stainless steel vats at around 18°C.
Notes de dégustation
Light pale yellow hue (white flowers with an exotic touch). Mineral finish and, despite its robust character, it leaves us with an impression of finesse and elegance. Complex, balanced and structured on the nose. Crisp and honest on entry to the palate, good length.
Mets d'accompagnements
Will pair perfectly with steamed sea and freshwater fish with a butter sauce, or lemon-roasted chicken. It may just as easily be enjoyed on its own, as an aperitif.
