Origine
Stony, well-draining, Jurassic clay-limestone of quaternary formation.
Exposure: South-southwest facing slope, receiving optimal exposure to the sun.
Average age of the vines: 70 years.
Vinification
Vine management: Single Guyot with a maximum of 8 eyes, ploughing, organic fertilizer, green harvesting, yield control. All the wines are produced using environmentally-friendly viticulture as part of an overall "reasoned agriculture" approach. Harvested by hand, the grapes are received in the winery using gravity and undergo cold static settling and a selection of the press juice. Gentle pneumatic pressing. 50% of the wine is fermented in barrels, 11 months vinification in fine-grained oak barrels, with no outside yeasts added. Malo-lactic fermentation is fully completed and the wine is aged on the fine lees, which are regularly stirred up.
Notes de dégustation
The wine displays green golden highlights and releases very fine and floral aromas of white flowers and violets. Very big on the palate, it is soft, with vanilla and spices along its length. An exceptional wine. This type of ageing brings out the full complexity of very ripe grapes by adding vanilla nuances from the wood. The remainder of the wine, aged in vat, will preserve the fruit aromas. This is a powerful wine showing great finesse.
