Origine
The vineyards are located in the villages of Mancey and Royer. The two parcels that go into this wine are over 45 years old.
Vinification
The grapes are picked and carefully transported to the press. Pressing is very gentle to ensure the juices run clear. Vinification takes place in stainless steel vats and lasts for about 3 weeks. Fermentation is temperature controlled (below 20°C) to preserve the aromas. The wine is then aged in vat, on its fine lees, until bottling, which takes place in the spring following the harvest.
Notes de dégustation
Golden yellow hue with green tints. Very fresh with yellow fruit and white flowers on the nose. It shows a perfectly balanced structure on the palate, bringing out the dried fruit and pear flavours. Nice acidity and good length.
Mets d'accompagnements
Pairs well with hot and cold pork meats (offal sausages) and fish cooked in butter.
