Domaine du Meix Foulot's Bourgogne Aligoté comes from a vineyard plot in the commune of Mercurey, on the Saône river plain side. The vines grow in loamy soil, which has a good hydrometry at depth.
Many of the plot’s vines are old, producing lovely golden grapes at harvest time.
Vinification
The grapes are harvested by hand, transported in crates and pressed directly using a pneumatic press. The juice is then carefully cold-settled before being transferred to stainless steel vats for alcoholic fermentation. The temperature is controlled throughout the fermentation process. The wine is then aged in stainless steel vats to preserve the freshness of the aromas as much as possible.
Bottling takes place 10 months after the harvest, with only an intermediate racking and filtration.
Notes de dégustation
Bright pale yellow with light green tints, this Bourgogne Aligoté reveals a fresh nose of citrus, white-fleshed fruit (fresh pears) and a lovely minerality on the palate.
Mets d'accompagnements
With its lovely zesty notes on the palate, this wine is perfect as an aperitif or paired with seafood and shellfish, as well as cheeses (goat's cheese or a fruity Comté).
