Origine
The parcel is placed side by side of the village of Chassagne, at the base of the slope. Clay-like and calcareous soil, stony with a sub-soil composed of white stones.
La Maltroie totalises 4.18 ha. Domaine Jouard owns 0.49 ha. 24a have been planted in 1952 and 25a in 1960.
Vinification
Manual harvest.
The grapes are directly pressed. After a light natural must racking, in vats, the wine is placed in oak barrels (French oak-tree, principally from Burgundy), in which it will make its fermentation (in fresh cellar).
The wine matures in oak barrels (25% are new and till 6 years old) during around 15 months.
The lies are pumped over twice a week after the fermentation, and then the wine is racked one time.
The wines are bottling at the end of the winter (February).
