The parcel is located side by side of the village of Chassagne, at the base of the slope. Clay-like and calcareous soil, stony with a sub-soil composed of white stone.
Vinification
Manual harvesting is practiced at the estate.
The grapes are pressed straight away. Following limited natural sedimentation in the tank, the wine is stored in barrels made of French oak (and especially Burgundian oak), where it undergoes fermentation (in a cool cellar).
Vinification takes place in barrels (25% of which get renewed, containing up to 6 wines) during approximately 12 months.
Sedimentation dregs are stirred in with the wines twice a week following fermentation and racked once.
Bottling starts up 18 months after the harvest at the end of winter (in February).
Notes de dégustation
A yellowish golden hue. The bouquet extends to mineral tones and encompasses lots of complexity, structured with floral fragrances, in addition to truffles and humus.
This wine is vivacious and sturdy to the palate; its body, depth and power make for outstanding cellaring potential.
The sustained finish and complexity of this wine are suggestive of a grand cru label.
Mets d'accompagnements
Ideal accompaniment for fish and white meat dishes, such as veal, either grilled or served in cream. Also excellent when associated with creamy mushroom sauces.
