Origine
Overlooking the village’s best climats, Château de Saint Romain is a former lodge house of the 13th-century Saint Hilaire priory, transformed into a château in the 15th century with the construction of its two large round towers. The family acquired it more than 150 years ago. The château's grounds were planted with vines over 30 years ago, reviving its age-old tradition of winegrowing and winemaking. This 1.65-hectare plot, located at the foot of the château at an altitude of 420 metres, faces south-east. The soil is made up of a layer of clay-limestone with white marl.
Vinification
Vinified in temperature-controlled stainless steel vats at 18-21°C, the wines are then transferred to oak barrels for 10 months, with a maximum of 10-20% new barrels.
Notes de dégustation
Clos du Château soon reveals a lovely touch of minerality which makes it nice and fresh. It is fat, soft and long on the palate with lovely balance and great finesse.
Mets d'accompagnements
This lovely subtle wine goes well with delicate pan-fried or steamed fish, scallops, and tuna or salmon carpaccio. It also complements the flavour of "persillades" (Burgundy snails, frogs' legs, ham marbled with parsley) and is the perfect match for white meat dishes and fish quenelles.
