Origine
This 0.40-hectare plot adjoins the fabulous Clos des Mouches terroir. It enjoys a south-easterly exposure, lies at an altitude of 240-260 metres and boasts a very fine gravelly clay-limestone soil.
Vinification
The grapes are fully destemmed, then vinified in concrete or stainless steel vats, with punching down and pumping over operations depending on each wine and daily tastings. The pre-fermentation maceration lasts 3-6 days at 15°C, followed by fermentation at a maximum temperature of 33-34°C. The entire vinification process lasts between 2 and 3 weeks, depending on the vintage. Malolactic fermentation occurs during the 12 months of ageing in oak barrels, of which 10-15% are new.
Notes de dégustation
Lovely ruby hue. The nose reveals very fine, sweet cherry aromas. On the palate, the wine is wonderfully supple, elegant and silky with smooth tannins.
Mets d'accompagnements
This Beaune 1er Cru pairs well with red meat and braised or roasted game animals and birds. It also works very well with cheeses such as Saint-Nectaire or Comté.
