This half-hectare plot was planted in 2000. It has some unique qualities that are well worth exploring. The appellation sits above the Santenay “Beaurepaire” premier crus. "Sous la Roche" lives up to its name, being very close to the bedrock and surrounded by old dry stone walls. Another special feature of this terroir is that the pebbles on the surface absorb the heat during the day and release it back up at night, resulting in beautifully ripe grapes and a lovely smooth wine. We planted Chardonnay here to take advantage of all these natural qualities.
Vinification
Harvesting by hand.
Vinification: Alcoholic fermentation in barrel for 2 months. Stirring of the lees (bâtonnage) determined by tasting and monitoring the wine.
Ageing: 14 months: 12 in barrels on the lees without any racking, then 2 months in vat. 100% in oak barrels, 30% of which are new.
Clarification: fining and lenticular filtration.

With its well-balanced, natural freshness, our very mineral Santenay "Sous la Roche" has all the qualities of a great fine white wine.
