Origine

Soil type: Kimmeridgian marly limestone and Exogera Virgula marl.

Exposure: West-southwest-facing slope

Vinification

The grapes are harvested by machine and then undergo a direct pressing and cold settling. Alcoholic and malolactic fermentations take place in stainless steel vats. The temperatures are carefully controlled by our temperature control unit.

The wine is also aged in stainless steel vats, for 6-8 months.

The bottling and packaging are carried out on the domaine.

Notes de dégustation

A dry white wine with aromas of pressed flowers mixed with notes of flint and light undergrowth. The palate is well-balanced and well-honed with a lovely thread of acidity running through it.

Mets d'accompagnements

Perfect with warm oysters, fish, seafood and poultry in a sauce, as well as Chaource, Langres or Époisses cheeses, and a traditional ham in a Chablis sauce.
