Origine
This wine comes from a combination of two plots of old vines. One, planted with 50-year-old vines in "Les Aubuzes" (a plot with old clones and a high clay content), the other, planted in 1935 in "En Crevèche" (damp clay/limestone soil with small pebbles which produces small, very black grapes). The two plots are vinified separately (a short vinification to preserve the crispness of the fruit) and then blended together.
Vinification
Cold pre-fermentation maceration (5 days), alcoholic fermentation (8 days), post-fermentation maceration (5 days)
14 months ageing: 12 months in barrel on its lees without racking, then 2 months in vat. 100% in oak barrels, 20% of which are new.
Gentle, measured extraction, to bring out the fruit.
Notes de dégustation
This wine has a delightful character combining the flavours of black fruit such as perfectly ripe Burlat cherries and wild blackberries with a mouth-feel of magnificent sweetness and a meaty, velvety texture.
