Located in the commune of Lignorelles, the domaine's Petit Chablis vineyards grow in good soil lying on slopes with an ideal exposure.
Our vines are between 25 and 30 years old, pruned to the simple and double Guyot method.
Vinification
We work 5,5 hectares of Petit Chablis, where we control the yields. Using temperature control, we can carry out low temperature fermentation in order to bring out all the aromas. All the wines are aged in stainless steel vats (for about 10 months) to preserve a fresh and fruity character. We bottle the wines ourselves on the property.
Notes de dégustation
It has a bright yellow hue, is fine and very fruity on the nose, and reminds you of white fruit and citrus…. yes, you’ve just opened a bottle of Petit Chablis! The wine is supple and surprisingly fresh on the palate, where we again find fruit and a light acidity that prolongs the aromas.
Mets d'accompagnements
This wine can be enjoyed as an aperitif (with gougères for example), with a starter, paired with oysters and shellfish, or even with fresh goat’s cheese.
