Chablis 1er Cru "Fourchaume" (White)

Origine

"Les Fourchaume" are located in the commune of Maligny as you head towards Chablis. This 1er Cru is renowned for its finesse resulting from an exposure close to that of the Grands Crus.

The Fourchaume parcels are located outside the village of Maligny as you head towards Chablis.  As the vineyard faces the setting sun, the grapes enjoy optimal exposure.  

Vinification

The wine is aged for 10 to 14 months, 50% in stainless steel vats to preserve freshness and 50% in barrels (new or previously used for up to 5 fills). Barrel ageing lends the wine complexity and depth. Blending the barrel-aged wine with the wine aged in vat enables us to achieve the perfect balance for each wine every year.

We bottle the wines ourselves on the property.

Notes de dégustation

On the nose, this Fourchaume shows surprising intensity with a mixture of floral and fruity aromas. The wine is direct on entry to the palate with the minerality of the terroir really making itself felt! Then the ripe fruit, almost honeyed, aromas prolong the tasting pleasure. 

Mets d'accompagnements

This wine pairs perfectly with seafood, large crustaceans (crab or spider crab), and grilled fish. It also pairs nicely with veal or Bresse chicken.
