Origine
The hamlet of "Les Galaffres" lies on a south-facing hillside. The marl and limestone soil here showcases the qualities of the chardonnay varietal.
Vinification
Mechanised harvesting techniques are employed. The grapes are pressed slowly and over an extended period to yield the lightest-coloured juices possible, without introducing the unpleasant taste of stems or green tannins. Alcoholic fermentation takes place either in the vat or, for 10 to 15% of the harvest, in new barrels and lasts 10 to 15 days. The wines are then racked and poured into another vat, where they will remain until malolactic fermentation has been completed. We also proceed with a racking during maturation. Bottling is scheduled at the end of the spring season, following a slight filtration step.

Exuding a light golden hue at an early age, this wine turns a pale gold over time.Lemon, apple and dried fruits are the most commonlyassociated fragrances. A lively taste imparts a most refreshing sensation.
Mets d'accompagnements
Well suited for cold appetizers and starters, cold fish platters or fish dishes in light creamy sauce; a nice aperitif idea as well.
