Bourgogne de Vigne en Verre was established in 1981 by a group of wine producers seeking to optimise the commercial and logistical management of their wine domaines. This structure is able to meet the needs of wine industry professionals more efficiently thanks to a managed distribution.

Origine

Part of the vineyard is young vines and the other is 60-year-old vines. The plot is located mid-slope in the "Creux de Sobron" lieu-dit.. Vines are planted on a light clayey limestone soil that contains lots of small pebbles.

Vinification

Grapes are hand-picked and then conveyed to the winery in crates. Part of the harvest is stripped and poured into a vat, where it ferments for an 8- to 10-day period. The technique employed enables producing elegant and delicate wines. After pressing, fermentation is completed in vats before transport to the cellars for barrelling, where vinification will last 12-18 months. Two or three racking steps will be carried out in order to separate out the deposits forming at the barrel bottom during the various vinification phases. Prior to bottling, a last racking allows assembling the wine in preparation of the clarification step. Just one slight filtration is performed before bottling.

Notes de dégustation

The Côtes de Nuits Villages appellation displays an attractive ruby red color. The bouquet tends towards berries and to the palate, savors of morello cherry, blackberry and wild berries so typical of Côte de Nuits wines are pronounced. The taste experience reveals well-built complexity with an elegant and subtle finish.

Mets d'accompagnements

This wine goes extremely well with wildfowl dishes such as pigeon, pheasant and quail.
