Origine
The "Bousselots 1er cru" appellation encompasses 55 ares of the estate's 9 ha of land holdings. The parcel is located to the north of Nuits-Saint-Georges on sandy and gravelly soils enhanced by the presence of a bit of white oolite. The average age of these vines has reached 37 years. The entire estate is farmed using controlled natural sodding with 2 or 3 clippings between April and July. Pruning is performed for the most part using the Guyot pruning technique.
Vinification
Harvesting proceeds both manually and mechanically, which allows for a very compressed picking season. The Pinot Noir grapes are conveyed to the pressing room and immediately treaded upon filling the press. Decantation of the must, which undergoes clarification following pressing, is completed within 24 hours. The must ferments in stainless steel tanks, thermo-regulated at between 18 and 20°C for 15 to 20 days. Bottling is scheduled after the malolactic fermentation step during April and May.
Notes de dégustation
The "Les Bousselots" appellation displays an intense hue. Early in its aging, this wine does not readily reveal its character. As years pass, aromas become more expressive and incorporate touches of fresh leather, animal perfumes, mixed with elegant balsamic and licorice scents.
Body and suppleness envelop the tannins, creating a fine label with an appealing sensation.
Mets d'accompagnements
Ideal accompaniment for roasts, game dishes and meats cooked in sauce, as well as gourmet cheeses. Its savors may be appreciated after minimum aging of 5 years, yet they continue to mature for a good ten years more.
