At the top of the hillslope of Nuits Saint Georges Village. Les Vaucrains is considered as one of the 2 best 1er cru of Nuits Saint Georges, with “Les Saint Georges”. If there were some Grands Crus in this Village, it could be one of them.
Vinification
The grapes are harvested by hand by 40 pickers over a one-week period. 100% destemming, pre-fermentation maceration at 10-12°C for 5-6 days in concrete vats. Vinification at 28-32°C for 18-21 days with 2 cap punching operations per day to help extract colour and phenolic compounds. After a pneumatic pressing, the wines are settled in buffer tanks for 5-6 days before being transferred to barrels (25% new wood). 1st racking carried out in September, one year after the harvest, then a 2nd racking one month before bottling, which generally takes place in May, two years after the harvest. The wines are bottled, unfined and unfiltered.
Notes de dégustation
In its youth, this wine shows a certain austerity. Then, as the years go by, its aromas become more diverse, evolving towards fresh leather and animal-type notes mingled with fine balsamic and liquorice overtones. Body and suppleness blend with soft tannins to create a wine that is a delight to drink.
Mets d'accompagnements
Matches well with roasted meats, games, sauce meats and fined and matured cheeses.
