Origine

Surface area: 1.10 hectares
Average age: 15-40 years
Soil: Clay-limestone
Exposure: West-facing and valley floor.

This wine is a blend of two plots lying in the Vaux valley between the villages of Mercurey and Givry. The vines are planted in a gravelly soil on a clay bed that faces west. The grapes are always small at harvest time and the juice is particularly fruity on the palate.

Vinification

The grapes are harvested by hand and transported in crates to the winery, where they are carefully destemmed, without crushing, before being placed in vats for fermentation. The vatting period lasts an average of 3 weeks, starting with cap punching followed by pumping over operations until the end of alcoholic fermentation.

The wine is then aged in stainless steel vats to preserve the freshness of the aromas as much as possible.

Bottling takes place 10 months after the harvest, with only an intermediate racking and a light filtration if necessary.

Notes de dégustation

Domaine du Meix Foulot's Bourgogne Côte Chalonnaise reveals a bright ruby red hue and all the aromas worthy of a fine Pinot Noir: black cherries, blueberries and just a suggestion of fresh raspberries. The tannins are light and fine.

Mets d'accompagnements

This wine can be enjoyed, whenever you fancy, with all kinds of simple dishes, both hot (pizza, pasta, fish) and cold (cold cuts, cheeses), or served as an aperitif with charcuterie and toast appetisers.
