Lying in the south of the Côte de Beaune, SANTENAY's vineyards extend over 378 hectares, of which 124 produce Premiers Crus (11 Climats). Red wines make up 98% of production and white wines account for only 2%. Soils: limestone-clay, slopes and semi-slopes. “Culture raisonnée” (sustainable growing) with ploughing, leaf thinning and green harvesting.
Vinification
Grapes picked by hand and meticulously sorted. Settling, gentle pressing, temperature control.
Ageing in barrels for 18 months with 20-30% in new barrels. Harvesting by hand. Settling. Low temperature fermentation at 18°C.
Notes de dégustation
This is a full, powerful and fat wine. Its complex aromas show remarkable mineral freshness, along with almond notes (green or roasted, depending on the wine's age) and white flowers ..Remarkably long lasting aromas and flavours. The 2008 vintage: this white Santenay will age well, but you can also enjoy it young.
Mets d'accompagnements
White wines should never be served chilled, but preferably at 11-13°C, and are best enjoyed with fish.
Suggestions: Grilled sea bass, pan-fried sea scallops.
