Origine
This climat is one of Beaune’s finest terroirs and is also the largest in terms of surface area. It is located on the slopes of Mont Battois, facing the town of Beaune. This east facing 0.40 hectare plot sits at an altitude of 230-300 metres. The soil is light, sandy and stony, hence the name "Les Grèves" (small gravel stones).
Vinification
The grapes are entirely destemmed, then vinified in concrete or stainless steel tanks with cap punching and pumping over operations tailored to each wine, determined by daily tastings. Pre-fermentation maceration lasts 3-6 days at 15°C, followed by fermentation at a maximum temperature of 33-34°C. The entire vinification process lasts 2-3 weeks, depending on the vintage. Malolactic fermentation takes place during the 12 months ageing in oak barrels, 10-15% of which are new.
Notes de dégustation
Pretty, intense, bright red hue. Lovely fresh nose with notes of red fruit and cherries. Powerful, tannic and well-structured on the palate.
Mets d'accompagnements
This Beaune premier cru goes well with red meat and small animal and feathered game (braised or roasted). It also pairs very well with cheeses such as Saint-Nectaire or Comté.
