Origine
The cru's name is derived from "Les Sausseux", a place where willow trees grow. In the 18th century, it was referred to as "En Chaucheus", which later became "Choicheux", and is today written "Chouacheux". This 0,67 hectare parcel is located at the far end of Beaune as you head towards Pommard. It is southeast-facing with brown limestone subsoil which endows this appellation with its characteristic finesse and elegance. These low-yielding old vines, aged just over 60 years, produce grapes with lovely concentration.
Vinification
The grapes are fully destemmed and then vinified in concrete or stainless steel vats with punching down and pumping over operations, depending on the wine and daily tastings. The pre-fermentation maceration lasts 3-6 days at 13°C, followed by 2-3 weeks fermentation depending on the year, at a maximum temperature of 33-34°C. Malo-lactic fermentation occurs during the 12 months ageing in oak barrels, of which 10-15% are new.
Notes de dégustation
Very deep, strong colour. The wine’s fine bouquet releases aromas of red berries. Its finesse and elegance on entry to the palate evolve into a silky finish. The wine displays a lovely, elegant concentration, magnified by the old vines, which has really come into its own.
Mets d'accompagnements
This Beaune 1er cru pairs well with red meats and braised or roasted small animal or bird game. Cheeses such as Saint-Nectaire, Comté and some goat's cheeses also make good matches.
