The parcels are located at the foot of the slope, east of the village of Chassagne Montrachet. The parcels in the appellation cover a combined total of 2.31 hectares. The vines are aged 45 years on average. The Chardonnay grows in clay-limestone soil, covered by a layer of fine silt.
Vinification
Harvested by hand. The grapes are immediately pressed. After a natural light settling in vat, the wine goes into French oak barrels (mainly Burgundy) where it will ferment in a cool cellar. The wine is aged for around 12 months in barrels, of which 10% are new, and the remainder used for up to 6 vintages. A proportion of the wine stays in vat. After fermentation, the wines will have the lees stirred up twice a week and will be racked once. Bottling takes place 18 months after the harvest, at the end of winter (February).
Notes de dégustation
Green-gold colour. Honest and open on the nose, with notes of white flowers (acacia and honeysuckle). On the palate, the wine is robust, delicious and fruity (white pears, peaches), with delicate mineral notes on the finish.
Mets d'accompagnements
Pairs well with fish and white meat, either grilled or in a creamy sauce. It also goes nicely with fattier dishes such as salmon or foie gras.
