The parcel is situated on the lower slopes, south of the village of Chassagne-Montrachet. The parcel covers 0.54 hectares in this appellation and the vines are aged 40 years on average. Here, the Chardonnay grows in two types of soil: light, gravelly soil at the bottom of the parcel and deep clay soil at the top.
Vinification
Harvested by hand. The grapes are immediately pressed. After a natural light settling in vat, the wine goes into French oak barrels (mainly Burgundy) where it will ferment in a cool cellar. The wine is aged for around 12 months in barrels, of which 25% are new, and the remainder used for up to 6 vintages. A proportion of the wine stays in vat. After fermentation, the wines will have the lees stirred up twice a week and will be racked once. Bottling takes place 18 months after the harvest, at the end of winter (February).
Notes de dégustation
Yellow-gold hue. The wine is open and lively on the nose, with notes of citrus and dried fruit. The wine is fruity, soft and subtle on the palate. The dried fruit flavours dominate this elegant and distinguished 1er cru.
Mets d'accompagnements
Pairs well with fish and white meat, either grilled or in a creamy sauce.
