The Parcel is situated in the Morgeot 1er cru area, in a location known as “Les Fairandes”, south of the village of Chassagne-Montrachet, at the bottom of the slope, before you reach Santenay. The parcel covers 0.63 hectares in this appellation. The vines are aged 50 years on average.
Vinification
Harvested by hand. The grapes are immediately pressed. After a natural light settling in vat, the wine goes into French oak barrels (mainly Burgundy) where it will ferment in a cool cellar. The wine is aged for around 12 months in barrels, of which 25% are new, and the remainder used for up to 6 vintages. A proportion of the wine stays in vat. After fermentation, the wines will have the lees stirred up twice a week and will be racked once. Bottling takes place 18 months after the harvest, at the end of winter (February).
Notes de dégustation
Yellow-gold hue. Honest but slow to open on the nose, with notes of hazelnut butter and green almonds. The wine is fat and rich, powerful and structured on the palate, and suitable for laying down.
Mets d'accompagnements
Pairs well with fish and white meats, such as veal, either grilled or in a creamy sauce.
