Origine
0.20 hectares of Chardonnay planted by Christian Clerget in 2003. Clay-limestone soil.
Vinification
Harvested entirely by hand and sorted in the vineyards by the grape pickers. The grapes are transported in crates of 30 kg, which prevents the harvested grapes from being compressed. Once the grapes arrive at the winery, they go directly into the press and are pressed. They are then transferred into vat, for 24 hours settling, before the start of alcoholic fermentation. Once fermented the wines go into barrels, of which 20% are new. They are then aged for 12 months during which time the lees are left undisturbed. The wines are drawn off and go into vat before being bottled, after a light filtration, before the following year’s harvest.
Notes de dégustation
Clean, clear appearance. Superb bouquet with pronounced citrus notes. There is a lovely balance of freshness and fat on the palate. An excellent wine for drinking now.
