Origine
Several plots are located on a plateau (Portlandian limestone soil)
with no particular exposure, as well as in various highly fragmented areas
of Lignorelles (Kimeridgian and Portlandian clay-limestone soils)
with varying exposures.
Vinification
The grapes are harvested entirely by machine and transported to the estate in
30 minutes or less.
The wines are aged in stainless steel vats, undergoing alcoholic fermentation
followed by malolactic fermentation. They are then stored
until bottling in September of the following year
in order to preserve maximum fruitiness.

Bright pale yellow colour. Intense, fresh and aromatic nose.
Crisp and lively but supple attack. Pleasant, balanced palate.
Persistent and refined finish.
Mets d'accompagnements
This Chablis pairs beautifully with seafood,
particularly oysters and and all styles of fishes. It goes well particularly with sole meunière, sea bream or sea bass baked in the oven, monkfish leg,
It can also accompany other dishes such as
veal blanquette.
