Origine
Surface area of the domaine vines in this appellation: 0.35 hectares. Location on the slope: the northern part of the vineyards between Vosne Romanée and Nuits Saint Georges. Eastern exposure. Average altitude: 275 m. Steep slope.
Vinification
Harvesting is carried out by hand. After de-stemming of 100% of the grapes, the harvest goes into tanks where it undergoes 3-4 days’ cold maceration. Fermentation lasts between 18-21 days, during which the must is closely monitored at all times. The cap which floats on the fermenting must is regularly submerged or sprayed. After de-vatting, pressing takes place in a high quality pneumatic press. The wine is racked into oak barrels, of which 30% are new, where it remains for 15-18 months. Bottling is carried out between February and April, depending on the vintage.
Notes de dégustation
The Nuits Saint Georges, "Aux Boudots" 1er Cru boasts aromas and flavours of black fruit (blackcurrants and black cherries), cocoa, coffee, lilies, cloves, leather and musk. Well-structured and robust, yet stylish and elegant.
Mets d'accompagnements
It can be used as a base for a rich sauce and can pair well with meat which has been "marinated" in it. It also goes well with game, such as venison and wild boar, and can accompany medium-strong cheeses.
