The Saint Amour has a north/northeast exposure and sits on schist soil.
Vinification
Harvesting is carried out by hand and the grapes are transported to the winery in small crates. The grapes are sorted and then partially destemmed (50-70 %). The traditional vinification lasts for 10-14 days, with punching and pumping over operations determined by the vintage.
Notes de dégustation
Appearance: Deep, garnet colour with carmine highlights.
Nose: Expressive, fruity, intense aromas of black fruit combined with notes of peonies, blackberries and blueberries.
Palate: Crunchy and concentrated. The black fruit and peony aromas come through again. Lovely intensity. The tannins are perceptible yet silky, making the wine well-structured and smooth on the palate and giving it good length.
Mets d'accompagnements
Ideal with red meat, rabbit and game birds. May be enjoyed in the first 5 years but can also age well for longer.
