Domaine Thomas is located in Prissé and has fifteen hectares of vineyards growing adjacent to the domaine's buildings. The appellation itself covers roughly 700 hectares of vineyards spread over several areas to the southwest of Mâcon. The terroir lies immediately alongside that of Pouilly-Fuissé. The vines are young and the soils are a fairly rich and generous clay-limestone.
Vinification
All the wines are produced using environmentally-friendly viticulture as part of an overall “reasoned agriculture” approach. The grapes are received by gravity. The pressed juice is immediately cooled and placed in a static settling tank for 12-18 hours. The deposit is removed and the clear juice is fermented in stainless steel, temperature-controlled vats to preserve the full potential and fruit of the grapes.
Notes de dégustation
Crisp, fine and fruity thanks to its ageing in vat. Green-gold hue. Aromas of acacia flowers and pears on the nose. Crisp, fresh and very easy on the palate, this wine shows a nice delicate, fleshy character.
Mets d'accompagnements
Enjoyed as an aperitif, its crispness awakens the taste buds. It pairs well with simple, as well as more refined, foods such as white meat, boned cutlets, crustaceans, fish, and fruit-based pâtisserie. Drink within 2-3 years to enjoy its deliciously fresh character. However, its structure will enable it to age well for 4-5 years.
