Bourgogne de Vigne en Verre was established in 1981 by a group of wine producers seeking to optimise the commercial and logistical management of their wine domaines. This structure is able to meet the needs of wine industry professionals more efficiently thanks to a managed distribution.

Origine

Domaine Chapuis has around 12 hectares of vineyards in the Mancey area. The vines were planted in a single plot of 98 ares in 2002, in a location known as "En Marigny".  Here, the soil is clay-loam, with a high proportion of limestone and a western exposure. The soils are all worked: earthing-up and de-earthing and 2 hoeing operations are carried out to avoid the use of herbicides.  The treatments carried out against diseases are sustainable and only performed when necessary. Insecticides have not been used for 8 years, nature having found its own natural defenses. The pruning system used is the Royat Cordon, a short pruning method designed to curb excessive production.

Vinification

The grapes are harvested and transported carefully to the press. Pressing is very gentle to prevent the juice from being cloudy.  The juice from the end of the pressing is not used. Fermentation is carried out at controlled temperature (below 20°C) to preserve the aromas. Bottling takes place in the spring following the harvest.

Notes de dégustation

In this terroir, the Bourgogne Aligoté produces a white wine with a pale green colour.  On the nose, Bourgogne Aligoté is characterized by aromas of white flowers and citrus fruit (grapefruit). The wine is crisp, dry and fruity.

Mets d'accompagnements

Bourgogne Aligoté can be enjoyed as an aperitif, on its own or with Burgundy cassis in a Kir. It also pairs well with crustacean and shellfish dishes, charcuterie (offal sausages), and steamed fish. Never put the bottle in the freezer, use an ice bucket if you need to chill the wine to the correct serving temperature.
