A wine for laying down.
It is becoming increasingly rare to find very old Pinot Noir vines in Chassagne-Montrachet. We wanted to preserve this parcel as it was planted by Christiane's grandfather, Joseph Bachey, back in 1946. It grows in a beautiful location, just below the “Abbaye de Morgeot” 1er cru, on fairly calcareous soils. Its exposure enables the grape to ripen early.
Vinification
Harvested by hand
Vinification: Cold pre-fermentation maceration (5 days), alcoholic fermentation (11 days), post-fermentation maceration (10 days)
14 months ageing: 12 months in barrels on the lees without any racking, then 2 months in vat. 100% in oak barrels, 20% of which are new.
Notes de dégustation
A wine boasting naturally firm and elegant tannins, which will retain its deep colour and black fruit aromas for several years. Age magnifies it.
