Origine
Ladoix "La Corvée" is situated in the northern part of the Côte de Beaune, and in fact geologically at the southern tip of the Cote de Nuits, adjacent to the famous Corton hillside. This plot was planted in 1943 and is the domaine's oldest. It faces due south and boasts a lovely stony red soil.
Vinification
Grapes are hand-picked and then conveyed to the winery in crates. Part of the harvest is stripped and poured into a vat, where it ferments for an 8- to 10-day period. The technique employed enables producing elegant and delicate wines. After pressing, fermentation is completed in vats before transport to the cellars for barrelling, where vinification will last 12-18 months. Two or three racking steps will be carried out in order to separate out the deposits forming at the barrel bottom during the various vinification phases. Prior to bottling, a last racking allows assembling the wine in preparation of the clarification step. Just one slight filtration is performed before bottling.
Notes de dégustation
The Ladoix 1er cru "La Corvée" offers a dark, brooding colour. The nose offers up scents of black fruit and cherries. On the palate, the structure is coated with a soft, firm and meaty flesh. The finish lingers with black fruit flavours and becomes more complex.
Mets d'accompagnements
This Ladoix 1er cru label provides an excellent accompaniment to all your roasted or stuffed poultry dishes. A winner alongside stronger cheeses like the "Epoisses". The wine can be aged 5 to 10 years depending on the vintage.
