This wine comes from a selection of the domaine's parcels, located on the terroirs of Vergisson. The parcels have been selected for their age, fruity character and minerality (characteristic of the village of Vergisson).
Vinification
The grapes are picked by hand and pressed immediately. After settling, 40% of the must is fermented directly in barrels (French oak barrels, aged 3-7 years). The remaining 60% is fermented in temperature controlled stainless steel vats. The wine will stay on its lees until the following June. After regular stirring of the lees and topping up, and after malo-lactic fermentation is completed, the wine is racked, blended, lightly filtered and bottled at the Domaine.
Notes de dégustation
Beautiful, bright, pale gold colour with with intense highlights. Very pleasant, fairly intense and fine on the nose, with a hint of oak and notable aromas of citrus, exotic fruit and white flowers. On the palate, the wine is powerful, smooth and silky. This wine, with its mineral and white flower aromas, possesses beautiful body... A very "Chardonnay" wine.
Mets d'accompagnements
Ideal as an aperitif, or with a platter of seafood, charcuterie, or goat's cheese.
