Origine
The vineyards of Pernand Vergelesses are located north of the Côte de Beaune at an altitude of 275 metres. There are brown and yellow marl soils on the upper slopes, stony limestone soils mid-slope, and clay-limestone soils on the lower slopes.
Vinification
Vinification in temperature-controlled stainless steel vats at 18-21°C. The wine then goes into oak barrels for a period of 10 months, with the use of 15-25% new barrels.
Notes de dégustation
White gold and pale yellow take on a golden tint with age. The aromas of white flowers (hawthorn, acacia) are joined over time by amber, honey and spices. The wine is crisp and dry, harmonious and very pleasant on the palate.
Mets d'accompagnements
Crisp and light, this wine is superb with sushi, setting off their dual crunchy-soft texture to perfection. It pairs happily with freshwater fish in a white sauce, with seafood pasta and risotto, crab, or steamed prawns, the flavours brought out by its delicious acidity. It can also pair well with blanquette of chicken or grilled chicken fillets. Cheeses such as Gruyère, blue cheese and goat's cheese are also good matches.
